So for dinner tonight (in the midst of all my reading, blog work, and researching law firms to intern at next summer) I decided to finally try out a recipe that I saw on Fitting It All In: Chickpea, Broccoli and Fig Salad. It seemed pretty simple so I thought I’d give it a whirl!
Ingredients:
1 crown broccoli, chopped
1 can chickpeas, drained and rinsed
1/2 cup chopped figs (about 7-8 small figs)
1/4 cup diced onion
3 tbsp. balsamic vinegar
1 tbsp olive oil
1 tsp apple cider vinegar
1 tsp whole grain Dijon mustard
1 tsp granulated garlic
salt and pepper to taste
BBQ sauce to drizzle
Since I was only making this for myself and didn’t want left-overs since I’m leaving for Kansas City on Friday, I cut the amounts here in half. This recipe is for 2 people.
I started by steaming the broccoli in the microwave for about 2 minutes.
Then, I added in the figs, onions and chickpeas and then stirred the sauce up. Once I had that done I drizzled the sauce over everything and mixed it up.
Unfortunately, I didn’t notice that the recipe says to put the salad in the fridge for 2 hours… I put it in for 20 minutes… I was hungry.
It was really good! I highly recommend this for dinner or an easy lunch for work. You can throw together the ingredients in the morning and put it in your office’s fridge. It took barely any time to put together.
Now, here’s the SUPER EASY dessert I was teasing you about earlier today!
It’s called: Banana Ice Cream!
Ingredients:
1 banana, frozen

All you have to do is cut up a banana and freeze it all day or overnight. Then put the banana in a food processor and blend (pushing it down the sides every once and a while) for about 4-5 minutes! I had to add a little bit of almond milk to mine since it wasn’t working in my “food processor” (aka attachment to my blender…).
Mine doesn’t look quite as pretty as the recipe I looked up, but still delicious! I think it would be even better if I put it in the freezer for a couple hours. Which the recipe probably would tell me to do if I didn’t close out the page and not save it… Clearly I thought “put frozen banana in food processor” was all I needed to remember.
Although the banana “ice cream” was delicious, when I went to my old office today, one of the women who works there brought me some apple pie that she had made. She knew I absolutely loved it! (literally, the best pie I have ever had in my life). So I definitely had to have a nice big piece of that pie. However, no picture!
Honestly, I didn’t take a picture because I wasn’t going to include it in the blog, but I didn’t want you thinking that I am perfect and eat only healthy foods or that I barely eat! Please remember that I don’t blog everything I eat; this isn’t a food journal! I’ve done the whole obsessive over every bit of food I eat thing and I am sooo done with that! Remember that life is about the little things and enjoying every moment, not worrying about every little thing. And trust me, I enjoyed every moment of that pie!
