First of all, I wanted to give kudos to my law school cafeteria staff for choosing some healthy options in the vending machine! While I was waiting for my lunch to heat up in the microwave yesterday, I noticed some new and healthy additions to the vending machine:
Special K bars, Fiber One bars, Nutrigrain bars and Nature Valley! It’s hard to find something healthy in a vending machine, so I have to say I was pleasantly surprised to see those in there!
Have you all been pleasantly surprised by any vending machine findings?
Last night I was starving when I got home, so I threw together the most delicious dinner using easy leftovers in my kitchen!
First, I chopped some onion and garlic, and with a little coconut oil, heated them up on the stove in a pan. Then I added some broccoli, cauliflower and kale. When it was almost done, I added 2 T of Braggs liquid Amos and 2 T of Apple Cider Vinegar.
While that was all cooking, I made a bowl of plain oats on the stove with 1/3 cup oats, 1/3 cup almond milk, and 1/3 cup water. I also microwaved a sweet potato that I had baked the weekend before.
When it was all done, I threw the veggies on top of the oats, and grabbed some nutritional yeast for the oats and veggies, and some cinnamon for the sweet potato! Delicious and quick!
So as I was perusing through Huffington Post yesterday, I came across a few interesting articles that I wanted to share with you all!
First, France Bans Ketchup in Schools. Say, WHAT?!?

The article says that they will be serving French fries once a week in schools and the children will be allowed ketchup with that meal. However, they will not be allowed ketchup for the rest of the week. The reason? They consider it an “educative mission†and want the children to become more familiar with traditional French recipes so that they may learn them and pass them down to the next generation.
Okay, I’ll admit, I hated ketchup as a kid! I only ate mustard on fries and burgers. However, I have to say this is a bit restricting. It’s a classic condiment that kids love and it’s not especially unhealthy! I realize that it’s their prerogative to choose what they serve in schools, but it seems a bit much to me to be making such a specific statement about one condiment! What do you all think about this?
Another interesting story I saw was about a teacher who finally revealed herself as the author of a blog, Fed Up With Lunch, which documented the lunches served at her school for an entire year. I had heard about the blog before but knew the teacher never revealed herself for fear of losing her job. I was really disgusted with the lunches! I also couldn’t believe that each item was separately packaged. As a bit of an environmentalists, that seems like way more trash than necessary.
I also thought she made an interesting point about lunch needing to be nutritious because many students rely on this meal as possibly their most important one of the day. I grew up going to a private school, so I never realized that some students are given lunch based on programs because of the economic status of their families. My friend, who is a teacher, explained to me that many kids don’t have parents who can or will make them dinner or breakfast and that what they eat at school could be all they eat that day.

Finally, the last story I came across was a little less controversial. Or actually, the most controversial because pizza toppings are serious business! I just had to click on a story titled America’s Most Popular Toppings! The article stated that 235 different pizza places were surveyed and that cheese was the most popular, with pepperoni the second most popular. Duh.
The article also included a quiz to see what Huffington Post readers thought:
I voted for pepperoni since that’s what I used to always order when I got pizza. Now I’m more of a marghertia fan, or mixing it up with interesting combos! Clearly Huffington Post readers agree about pepperoni, but I was glad to see mushrooms up there too! Gotta get your veggies!
