Mischievous Hermit Crabs and WIAW

Okay. It’s been like a month. I’ve finally bit the bullet.

I named the hermit crabs. They actually inspired me to give them their names (finally!!!). Monday night I met up with my brother, sister-in-law, and their friend Paul who was in town to run the Chicago Marathon, at a bar to watch the Bears game. When I got home, I walked into my closet (where the crabs are since it’s the warmest room I have) and I heard a large crash come from inside there cage.

What in the world were they doing?!?!?

My theory is that they were on top of the coconut trying to escape, and I startled them and they fell off (hence the crashing noise).

Anyway. On to the important part. Although I may need to sleep on it, I think their names will be:

Padfoot and Prongs!

The little one will be prongs (which was James Potter’s nickname) and the big one will be pad foot (which was Sirius Black’s nickname). I decided on these because apparently my two hermit crabs are quite the mischievous pair, and they needed names that fit them! Since James and Sirius were always getting into trouble when they were at school, I thought the names fit.

For anyone who is not a Harry Potter freak like I am, I apologize if this makes no sense to you and is thus a disappointment.

For Harry Potter fans, do you think I picked good names? They’re totally growing on me.

Today’s What I Ate Wednesday consists of what I actually ate on Tuesday… But that’s all good, because I had some good food!

Peas and Crayons

After my 4 mile run, I had some delicious Pumpkin Pie Oats! They really do taste like pumpkin pie; it’s all the egg, I swear!

I had breakfast earlier than usual, and my class was later than usual, so by the time I got to school I was getting pretty hungry. I decided to try out a smoothie from the Protein Bar to tide me over! I absolutely LOVE the protein bar.

All of their food is high in protein (obvi) but is so healthy too! They use all-natural chicken that comes from an Illinois farm, and their organic beef is a top sirloin beef from the Illinois farm Sommers Organic where the animals live free-range and are 100% grass fed. Their produce is local and organic whenever possible and often rotate menu items to reflect in-season produce. Protein bar also has several options for any dietary concerns, and most menu items can be made vegan.

One of my favorite menu items is the grilled Vegan Bar-rito, which includes their house-made seasoned black beans, organic quinoa, and vegan cheese. I’d never had a smoothie there before, so I thought I’d try it out!

I got the Pier-nut Butter & Jelly (Pier because of Navy Pier here in Chicago). It included Vanilla protein (I got soy protein), almond milk, all-natural peanut butter, blueberries, strawberries, and organic agave nectar. I also added the energy boost!

The smoothie was absolutely perfect! It really tasted like a peanut butter and jelly sandwich in a smoothie! Soooo delicious. I wish it had never ended.

For lunch, I had a salad that I had prepped at home. It contained just about every veggie that I’m allowed to eat: Romaine lettuce, zucchini, peppers (red, orange and yellow – so pretty!), and mushrooms. For a dressing, I used Annie’s Lite Honey Mustard. LOVE that stuff.

For afternoon snacks, I had a plum, some Rice Chex, and freeze-dried cantaloupe! It was on sale at my local grocery store so I thought I’d try it out… A little odd, but a good low-cal snack. I’d rather have the real thing though.

When I got home, it was time to put that pulled chicken to good use! I had also roasted an acorn squash this weekend by cutting it in half, placing it face down in a baking pan with a little water, and cooking it on 350 degrees for 40 minutes.

To fill the squash, I put mushrooms and kale, along with some chopped garlic and coconut oil in a pan.

After the veggies had cooked a bit, I added in some diced tomatoes from a can and the chicken!

I let it all heat up for a bit and then put it inside of my acorn squash (which I had microwaved to re-heat). I used Nutritional Yeast to top it off! So delicious and fun to eat!

For dessert, I tried out Chelsey’s Pumpkin Protein Muffin! It looked so delicious that I had to try it out myself – and it was good! Moist and perfect pumpkin taste!

I ate mine with some plain non-fat Greek yogurt, and put a little bit of peanut butter on bits of it, which was perfect because the peanut butter melted a little bit! But honestly, the muffin tasted delicious all on its own!

Notice Neville, my goldfish, in the background? He was jealous of the Hermit Crabs and wanted some screen time. Neville turns 14 months old this week!
