Good Morning everyone! I hope you all had a great Thanksgiving! I sure did!
My Thanksgiving morning started out with a 5K Turkey Trot in Overland Park, KS. We headed out for the race thinking it wouldn’t be a big deal, but when we were probably a mile away from where the race was being held, we already saw traffic backing up!
I guess I should have known by our race numbers, I signed us up almost 2 months ago and we were numbers 1063 and 1064…

Luckily, we were able to find my cousins, R.C. and Allie! Allie ran in the Susan G Komen 10K with me back in September and she’s my “running guru.” Haha, she’s run a few marathons so I always go to her for advice!

We all started together, but Allie and R.C. headed off once we hit the start, finishing it together, and I ran the whole race with my dad.
I’m so glad I decided to run with him, rather than race the 5K. Thanksgiving is all about being thankful, and I am so thankful for my dad! I had a great time running it with him and I was so proud of how fast he was moving! I don’t know what our final time was, but it was around 28:15, which is a PR for him!
For Thanksgiving dinner, I offered to bring some roasted brussels sprouts, so that I would have another dish that I could eat. I found a recipe on Food and Wine’s website for Roasted Brussels Sprouts with Pancetta. I didn’t have shallots, so I ended up using vivaldi onions instead.
So what did I learn making this simple dish? I am a baker. Not a cook. I’ve always had a natural ability to bake, but cooking has typically been overwhelming for me and I never know what to do. Haha, everyone said it was good, but I was certainly worried. I definitely don’t think they were the best brussels sprouts ever… but I tried.
Also, please note this fantastic dish that my mother found. It’s from her wedding… in 1983.

What was great about dinner though was my cousin, Allie, made me a small dish of millet stuffing! It was really sweet of her, especially since stuffing is my favorite part of Thanksgiving dinner (other than pie…). It wasn’t exactly the same, but I got the flavors and really appreciated it! I also was sent home with the rest in a zip lock baggie!
Dinner turned out a lot better than I expected, I barely noticed what I couldn’t eat and had a great time enjoying the company. It wasn’t even that bad sitting and talking while everyone else had their pie (they made three pies! Pecan, apple and pumpkin). I do wish, however, that I’d thought to have a dessert for myself at home afterwards! I got home and wanted nothing more than something super sweet!
