For the past week I have been green.
Green with envy.
Several of the bloggers that I follow have been using leftover cranberry sauce in all sorts of ways, in oatmeal, on toast, on salads, you get the idea.
Well I decided to take matters into my own hands.
Why is the pot pink? Hmm….
Maybe because I made my own cranberry sauce!!!
It was WAY easier than I expected. I decided to forego the added sugar since it’s just for me, so I used 1 cup water and 1 cup stevia.
Yesterday morning I finally got to use it on my oats like I’ve been DYING to for a week!
Cranberry Oatmeal
Ingredients
1/3 + 1/3 cup water (used separately)
1/3 cup almond milk
1/3 cup oats
1/2 banana
1/2 T ground flax
1 T peanut butter
1/3 cup cranberry sauce
1/4 tsp vanilla
Directions
A couple hours before (I do this before I go workout, you could also do it the night before) serving, put the oatmeal, 1/3 cup water, almond milk and flax in your pot and heat it until it boils. Then turn off the heat and cover the pot.
When you are ready to eat, your oatmeal has already thickened up!
At this point, add 1/3 cup water, stir it in, and turn on the heat. Then you add your vanilla and banana and whisk with a fork or whisk until the banana is whisked in as much as you’d like. Once the oats are cooked, top with your cranberry sauce (I heated mine in the microwave beforehand) and peanut butter!
It was exactly what I was craving! So delicious, fruity, sweet and creamy!

Monthly Goals!
I love doing my monthly goals because with time going by so quickly, it’s a great way to reflect on things that I would like to accomplish.
Let’s see how I did with November’s Goals:
1. Make school a higher priority
I definitely think I did a good job with this. Finals are coming up and I really spent a lot more time preparing myself for finals during November. Well, mostly Tax, but I knew that would take a lot of time for me.
2. Have fun with my races this month
I also achieved this goal! I did great on my 10 mile race and loved that my brother and sister-in-law (and Molly!) came to cheer me on. I ran the Turkey Trot with my dad at his pace, and it was a lot of fun to do that with him. I even added in one more 5K, Every Step Counts, and really enjoyed running that (and the 7 miles beforehand…) with Chelsey!
3. Be better about keeping up relationships with friends
Um… epic fail. I meant to call a bunch of friends this month, but I didn’t manage to. I did come in “contact” with just about everyone. I saw a few friends when I went home for Thanksgiving, and a couple I texted to make sure they’d be in Charleston before I booked a flight to visit! So I guess I took steps… Haha, I try.
So now I need some new goals!
December Goals:
1. Keep up my long runs. Without a race to train for, I know it will be easy to not do long runs anymore. However, I LOVE long runs! I love the “runners high” that I get from them, as well as the sense of accomplishment! This will be hard to do with the cold weather setting in, but I’m really hoping to accomplish this goal.
2. Practice Intuitive Eating A lot of other bloggers have talked about “intuitive eating” which is listening to your body and eating when you’re hungry and stopping when you’re not. Sounds simple, right? Well not for me. I tend to eat when I’m bored… which is a lot when you’re sitting at a computer studying. I’ve often kept eating when I’m full and then I just feel sick and bad about myself afterwards. It’s definitely something I need to work on!
3. Make my family and friends LOVE gluten free cookies! Every Christmas I love to make tons of cookies and give them out on cookie platters, or just leave them for my family to have! This year I’m hoping to show my friends family that gluten free can be just as delicious as anything with gluten, and NOT WEIRD. I might have to lie to them…
