WIAW–in Kansas City!

Hey everyone! Well it’s Wednesday and you know what that means: What I Ate Wednesday! If you are new to WIAW, head over to Peas and Crayons to check it out!

I had a dentist appointment in the morning, so I had breakfast and then brushed away! For breakfast, I made some chocolate pumpkin protein oats! These will be some of my last since I have the chocolate protein here at home, but vanilla in Chicago! I might have to order some chocolate when I get back…

And I am happy to report, no cavities!

After the dentist, I ran a few errands and then came home for lunch. I made myself a salad with mixed greens, sliced mushrooms, cherry tomatoes, black olives, 1 can of tuna in water, some “broccoli slaw” from Trader Joe’s and then Annie’s Lite Honey Mustard Dressing. On the side, I added a piece of Udi’s bread with some PB2 powder mixed with cinnamon and water on top!

I headed out for a few more errands and sipped on a Kombucha while driving. I’m getting way too used to these things… Soon I’ll be back at school without my parent’s paying for groceries…

When I was driving back, I saw the outside temperature was 58!!! That is crazy for January in Kansas City! I had 3 miles on my training plan, so I decided to run them outside!

When I got home I could feel myself getting a little hungry, so I made a “handful” of trail mix (threw together a few raisins, some GF granola, and some carob chips!

Before my run, I tried out Ashely’s upper body workout she had posted that morning. My arms were way more sore than I realized from Jazzercise, so I ended up cutting out the 1 minute pulses, and turning them into supersets (I picked two and did them back to back).

Then it was time for my run! My legs were also very sore from running 8 miles and then doing Jazzercise the next day (I’m thinking I may take a rest day tomorrow…) so my first mile was pretty slow, which wasn’t helped by the fact that most of the up-hills were in the first mile. But the rest of the run I rocked it (okay, a lot of down hill…).

Here are my splits:

mile 1 –> 9:34

mile 2 –> 8:35

mile 3 –> 8:23

I finished in 26:31 for an average pace of 8:51!

My beautiful neighborhood sure didn’t hurt either! I took a path that I normally walk, and really enjoyed it! I felt like I was home after spring semester, not fall!

After my run I was pretty hungry, so I mixed some chocolate protein powder and Truvia in Greek yogurt and topped it with blueberries and carob chips. Totally hit the spot!

For dinner, I went out with my mom and another mom and daughter pair! My mom’s friend Kim and her daughter (and now my friend!) Bailey. We went to Urban Table, which is a newer restaurant in Corinth (for those of you who know what that means…).

Sadly, I completely forgot to take any pictures… Yes, epic failure. But I can tell you what I had! We split a bottle of a Malbec wine from Argentina, and then their Charcuterie appetizer. We choose Manchego, Garrotxa and prosciutto. I absolutely love Manchego cheese (thanks to Bailey introducing it to me a while ago), although I was surprised at how little cheese and meat came with the plate based on how much we paid.

This surprise of cost versus size continued with my dinner. I ordered their mahi mahi special, and basically it was a fillet of fish with a teeny bit of puree and shaved veggies. Haha I was hungry by the time I got home.

All in all, the food was delicious and the atmosphere was great. However, if I had paid for it myself (thanks mom!) I would have been rather frustrated by the price of the food based on what you actually got.

What is one thing you would buy at the grocery store all the time if it didn’t cost so much?
