Happy Wednesday!!!! You are halfway through the week! Can you feel the weekend!? It’s coming, I promise! Thank goodness for What I Ate Wednesday, since it’s a great way to keep me entertained in the middle of the week! I love checking out new blogs and recipes! Today’s WIAW is featuring all my food from Monday! Mondays are normally a very long day for me, but if you read my post on Monday, then you’ll know that I had my later class cancelled, so I got to head home early! I was a happy camper.
My day started out with… EGG WHITE OATS! Okay, I understand that I have a bit of an obsession, but don’t worry, I have some plans to mix up breakfast. I was just soooo in the mood for them!
And yes, this is a recycled photo… I was in such a hurry that I didn’t think to take a picture! That’s one negative thing about these oats, they take a long time to make and a long time to eat! And I had a bus to catch to get to my 8:30am class! So delicious though.
Oh, and I was not watching the Office this Monday morning, I was watching Friday Night Lights on Netflix. I AM ADDICTED. Someone mentioned it in the comments, and I decided to check it out. LOVE it! Anyone else?
On Mondays (as well as Wednesday and Thursday) I have class straight through lunch time, so I end up having a snack during lunch time and then lunch when I get home around 2. Not ideal, but I make it work.
For my snack, I only had 10 minutes to eat so I had two pieces of Jamie Eason’s cinnamon swirl protein bread and an apple!
I loved her other flavors (pumpkin and chocolate) so much that I wanted to try out the cinnamon one as well! I baked them on Sunday so they were ready to go for the week!
The cool thing about this recipe was that you added a layer of cinnamon and stevia in the middle and on top!
They were absolutely delicious, and a little more dense than the other bars (which she warns you they will be). The only changes I made were using garbanzo bean flour and then applesauce in lieu of baby food and no vanilla yogurt (which was optional) because I didn’t have any.
I also had an apple, some almonds, and some tea I bought at school as my snack. And see that little bottle filled with white liquid? That’s almond milk for my tea! My dad gave me some little fluid containers so I could bring my own almond milk and add it to coffee, since most coffee shops don’t offer almond milk. Thanks, Dad!
By the time I got home, I was STARVING. We are talking stomach eating itself hungry! On the bus ride home, I’d read Kath’s most recent post, where she showed her lunch, which was a brown rice and veggie scramble. I knew that’s what I wanted.
I didn’t have brown rice, but I did have some millet that I’d cooked up the week before just for occasions like these! I mixed 1/3 cup millet with some steamed okra and then some cherry tomatoes, mushrooms and onions that I had sautéed Sunday for meal prep. After letting all that heat up, I added in one scrambled egg and mixed it up until cooked!
It was delicious! Like I was having homemade fried rice! Not quite the same with the millet, but it had a similar effect. I also had some plain Greek yogurt with protein powder and cinnamon mixed in, topped with dried cranberries.
When I got back from the gym I was craving a ton of different things, so I ended up having quite a mish-mashed dinner. I started out with some steamed okra, bean sprouts and 2 chicken meatballs all mixed up with 1 T of nutritional yeast with some flax milk to thin it out into a sauce.
Then I made another one of Stuft Mama’s protein muffins. This one had pumpkin, spinach, and some blueberries! It was a bit mushy, I think the spinach and pumpkin, plus the juice from the blueberries, was just a bit much. I ate it with “chocolate protein sauce” which is 1 T PB2, 1 T protein powder, 1/2 T cocoa powder, stevia and water. I also threw in some of the extra blended spinach I had made up for the muffin. Extra veggies!
Haha the angle of this photo makes the bowl of chocolate sauce look huge! Haha I swear it wasn’t that big. The muffin, on the other hand, was HUGE! And I just realized it looks like green play-dough.
A little later I was still feeling a bit snacky (I had dinner at 6…), so I had some dried cranberries, some dark chocolate and these Almond Nut Thins!
I discovered these when I was in Colorado with my mom and fell in love! They are just like rice chips, but made with almonds. They have a ton of great flavors too! But be sure to read the ingredients, some do have soy in the flavoring! Haha not that anyone else can’t eat soy…
