Okay, so my food on today’s What I Ate Wednesday is from Monday, not today (which I’m referring to as the “Vanishing Day”), but it works. Before we get to my eats for WIAW, does anyone know what today’s date is?
It’s February 29th! I’m calling it Vanishing Day (because it vanishes most years! and I read too much Harry Potter), but many of you common folk refer to it as leap day! According to my trusted source for everything, Wikipedia, Leap Day occurs in years divisible by 4, such as 2004, 2008, 2012, etc. It then continued to explain many other mathematical things which made no sense to me. The purpose of having a leap year, when this one extra day is added, is to keep the calendar year coordinated with the earth’s position in relation to the sun. Otherwise, over a couple hundred years, summer dates and months would turn to actually being during fall, then winter, etc. Crazy, huh? Leap Day was actually introduced during Roman times.
You know what I always think about when we have a leap day? What if you were born on February 29th!?? You wouldn’t have an actual birthday most years! I mean yes, you probably just celebrate on the 28th or something, but it just seems so weird to me! Now all I’m going to think about today is all the babies being born today who aren’t going to have a birthday! And obviously I think of birthdays because they involve cake, and who doesn’t love cake?
Speaking of food, it’s time for my WIAW! If you’ve never heard of WIAW, head on over to Peas and Crayons to learn more about it, and maybe find some new blogs to follow or recipes to try! This Wednesday is the last Wednesday in February, meaning it’s the last day of WIAW, Love Your Veggies Month! Good thing I got in plenty of veggies today to show my love!
My day started off bright and early with a 5am wakeup call to hit the gym! I woke up Monday with a lot of pain in my heel and decided I should definitely not run Monday and probably not Tuesday, so I did the stationary bike for 20 minutes and then did a couple rounds of Ashley’s For The Love of Push-Ups Upper Body Circuit Workout! I’ve actually been doing this every Monday because it’s quick and it really gets my upper body, I’m always sore the next day!
Since my heel was hurting I was a little slow moving, so good thing I had already made some overnight oats the night before. I ended up having to toss them in my lunch bag and eat them when I got to school!
Night before:
In the mix was 1/2 cup flax milk, 3/4 cup water, 2 T chia seeds, 1/3 cup oats, 1/3 cup pumpkin, 1 scoop vanilla protein powder, cinnamon, stevia, and nutmeg.
The next morning:
I do wish I hadn’t added the last 1/4 cup of water, or at least did more milk instead of water. It had a bit of a bland taste to it and it think it was because it was too watered down? I added some cinnamon and nutmeg before I headed off to school with it! Since it wasn’t amazing, I’m not adding it to my recipes tab (trust me, there are PLENTY of amazing oatmeal recipes on there!)
While I was at school it was FREEZING in my building so I went to the cafeteria for a cup of tea! They just started carrying Tazo Tea, which is the type of tea Starbucks carries. I decided to go for the Passion tea and loved the color!
It was pretty good! Very fruity!
After class I had a little time before I needed to head to a doctor’s appointment, so I stayed at school for a bit to enjoy the lunch I had prepped the day before!
In the mix: quinoa, kale, carrots, tuna and Raita sauce from Trader Joe’s! It was even better than I’d been hoping! I am really in love this this sauce and it mixed so well with the tuna! I’ll have to make more mixes like this in the future!
After my Doctor’s appointment I headed home to relax. The pain in my heel had gotten considerably worse throughout the day and I knew any walking wasn’t helping. I decided it was best to skip my last class, get a cab, and head straight home. When I got home, I snacked on some pumpkin seeds that I bought at Walgreens!
These actually turned out to be a mess. First off, I didn’t realize until several seeds in that I wasn’t supposed to eat the whole thing… That I should have taken off the shell. Whoops. Tasted just as good to me. But then, trying to get the seed out of the shell was ridiculous! Let’s just say that I spent about an hour eating this bag while doing some school work. And I’m glad I wasn’t in public…
For dinner I was feeling Mexican! So I made up a quesadilla with black beans, some shredded brussel sprouts and some gluten free shredded Mozzarella cheese. On the side I had two kinds of salsa and some hummus!
It totally hit my craving but I was hungry after, so I made up a bowl with 1 cup greek yogurt mixed with stevia and cocoa powder, topped with granola (def added more granola…). There was also a big spoonful of PB involved as well.
What’s your take on pumpkin seeds? Do you eat the shell? I tried Googling this…
