A Delicious WIAW

Hey everyone! I hope you all are having a great week! So far mine’s been pretty good, things have picked up a little bit around my office, mostly in the sense that I’ve been included in a lot more meetings and conference calls, which means less time in front of the computer!

Today’s WIAW eats come from Monday! It was a pretty normal day in the office so nothing too exciting, other than the fact that I’m looking back now and remembering how delicious all my food was! For breakfast, I started off with a delicious bowl of oats! I made my Apple Pie Oats, but instead of mixing in apple pieces, I mixed some chopped up peach! It was pretty good if you ask me, definitely a little more Summery!

For lunch I had thrown together something pretty quickly, but it turned out well! I mixed 1/2 cup of cooked quinoa with 1/2 cup cannelli beans, and then threw in some steamed eggplant and squash, along with marinara sauce! Easy but delicious!

I love having a little something sweet after lunch, so I keep these candies in my drawer. They are French candies, or “bon-bons” that my French teacher used to give me for my birthday! I love them! I’ve found them at both Whole Foods and World Market.

The afternoon snacks that I had packed for the day were carrots, almonds and a small piece of dark chocolate, and a Two Degrees Chocolate Banana Bar.

I didn’t end up eating the almonds, but I ate everything else. The Two Degrees Bar? AMAZING. Let me repeat that, AMAZING!!!!! Seriously. I’ve had another flavor, but this one was so good! Seriously. Go eat one. Now. I’ll wait.

Done? Did you like it? Of course you did.

Now on to dinner! When I got home I wasn’t feeling well, but after a while I started to crave a tortilla. Since I figured I should throw in some veggies, I decided to make a pizza! It’s a brown rice tortilla topped with marinara sauce, spinach, sliced tomatoes and mozzarella cheese. Since I didn’t have any hummus (my go-to tortilla pizza dip), I used some cashew dip that I’d made from Elise’s new FODMAPS book. So good! It was the perfect replacement.

Eating the pizza totally gave me my apptetite back, and I was craving something salty. I didn’t have any popcorn or chips or anything like that, so I made some out of veggies! I sliced up some zucchini and eggplant, tossed them in some olive oil, a bit of salt, and garlic powder, and then roasted them in the oven at 450 for about 20 minutes. Served with ketchup!

A little bit later I was craving some dessert, so I had some plain Fage Greek yogurt, with some PB2 mixed with protein powder and cocoa powder, and then some fresh berries on the side! Totally hit the spot.

I definitely think I did a great job with healthy snacks! Loving this theme, Jen!

And of course I ate that while watching Arrested Development. I ran out of How I Met Your Mother episodes on netflix, so I’ve moved onto Arrested Development. I’m enjoying it! Anyone out there watch?
