Happy Fourth of July everyone!!!! I hope you all have fun plans for the holiday! Last year at this time I was up in Michigan with my friend Caroline! Unfortunately we couldn’t go this year, but I miss her! Hi Caroline!

For this week’s WIAW, I decided to show you what I eat on a weekend day, rather than a boring workday. As I mentioned in my post a couple weeks ago, weekends are hard for me when it comes to emotional/binge eating. However, I had a great day on Sunday, so I wanted to share that, especially since I’m sure the same food over and over on a weekday gets a little boring…

For breakfast, I met up with Cate from Good For You for brunch at Nookie’s Tree! She’d been to another location in Chicago for lunch and enjoyed it, so I thought it would be great if we tried it out for breakfast!



I ordered their special, which was an egg-white frittata with squash, portobello mushrooms, red peppers, and feta cheese. I also got it with a side of hash browns.

The hash browns were great (I love mine crispy) but the fritatta was AMAZING. Seriously. The egg whites were so fluffy they were like egg white clouds. The veggies were perfectly seasoned and cooked, and they were big slices. The feta cheese was the perfect topper for it. I could not say better things about Nookie’s breakfast!

Cate got peach pancakes with raspberries, which looked delicious! She was also raving about the butter that came with the pancakes, which she said seemed to have been caramelized with peach flavor. Haha you’ll have to go to her blog to hear more about it!

That breakfast kept me full for quite a while. I went to Trader Joe’s after brunch, then went home, unpacked groceries and did a lot of cleaning up around the apartment, as well as some reading and netflix watching. After I while I decided to make some pancakes that I had seen on Blogilates. I used her receipe, however I used 1/4 cup egg whites instead of an egg and I also added cinnamon and 1/2 tablespoon of

They turned out delicious! I topped them with some maple syrup, they didn’t need anything else! So good!

I was craving some PB afterwards (should have put it on my pancakes…) so I dug a piece of dark chocolate that I keep in my freezer into the PB jar. Perfection.

I had a bit of a toilet debacle that afternoon (accidentally knocked an almost empty roll of TP into the toilet as it was flushing…) so after dealing with that, I went out and ran a bunch of errands. I started getting hungry and decided to go use my free froyo of the week! Perfect afternoon snack, right?

Georgia peach, Pistachio Cream, and Strawberry (I just couldn’t pick a flavor) topped with blueberries, crushed M&Ms and a few pieces of this rice candy… I forgot what it’s called but it’s some good stuff.

I actually ended up walking a total of 4 miles, so for my rest day that’s pretty good to fit into Jen’s Food AND Fitness theme for WIAW! When I got home I received the package from Nature box that I talked about Monday, and had to sample a piece of the sliced pear!

For dinner, I realized I had an acorn squash that I hadn’t touched in a week. I decided to cut it in half, bake it in the oven (about 400 degrees for 40 minutes) and then filled it with some steamed zucchini and eggplant mixed with marinara, topped with an over-easy egg!

Unfortunately, the acorn squash wasn’t great. It was pretty tasteless… Maybe because it’s not in season? Oh well.

For “dessert” I had a few spoonfuls of peanut butter and raisins, as well as more dried pear from Naturebox! So good.

I’ve found that I’m very good at stopping my nighttime snacking if I have a lemon drop when I’m done eating. It’s like a signal to my brain: this is your last sweet. Time to stop! Weirdly, it works pretty well.

I’m sure tea or something would be healthier… but this is quick, easy and delicious! Too bad my World Market just closed… haha. I’m about to run out!
