Happy Monday! I hope you all had a great weekend! The first part of my weekend was pretty good, I had a great 13 mile long run Saturday morning and then frozen yogurt with Chelsey! Sunday, however, was not so awesome. I was pretty sick all day with a fever, and since I still felt awful and had a fever when I went to bed last night, I decided to stay home today. So far I’ve “slept in” (aka until 6:45) and am planning to just rest and recover. And hopefully get some things done that I couldn’t do yesterday!

Have any of you heard of Headbands of Hope? I head of it on another blog, and I cannot for the life of me remember which one! Haha so I apologize for no recognition here! But when I saw it I immediately knew I needed to get one to support the organization!

Jessica Ekstrom is the founder and president of Headbands for Hope and came up with the concept when volunteering for the Make A Wish Foundation her Junior year of college at North Carolina State University.

As the back of the card says, for each headband purchased, not only is a dollar donated to the St. Baldrick’s Foundation to fund childhood cancer research, but another headband is given to a girl touched by cancer.

Why headbands?

Many girls fighting childhood cancer lose their hair during their rigorous chemotherapy treatments. Headbands are the perfect way for these girls to keep their feminine identity and have a constant reminder that they’re not alone. 

 

I’ve only known a couple women who’ve dealt with cancer but I know the effect that hair loss and the physical strain of medication can have on a person, so having something like cute headbands for these little girls is a great concept to help them feel pretty and re-build their self esteem.

I bought this headband (above) for myself and another for a friend of mine, lol which sending to her is one of my To-Do list items today. (Don’t worry, she doesn’t read my blog, she’ll still be surprised).

            

You can shop for headbands on their site here. They have a bunch of different varieties, some with big flowers and bows, others more simple, and the ones I bought were only $8!

 

In other news, while I was Molly-sitting last weekend I decided to make my brother a Mexican Lasagna to say thank you for a few “good-big-brother” favors he had done for me recently. I found an easy recipe online and only tweaked it a little by using 3 tortillas instead of 5.

First I chopped up the 1 onion and 2 bell peppers and sautéed them in a pan (be sure no Mollys eat the onion pieces! Can you spy Molly in this picture?).

Then I mixed in a can of black beans with the onions and bell peppers. After that I layered the lasagna, starting with a tortilla, then a layer of veggies, topped with some cheese. I continued this pattern until it was full! The recipe said to use a pie pan, but this was the closest I could find!

Then I baked it in the oven at 350 degrees for about 20 minutes! Voila!

I didn’t get to try it myself (flour tortillas) but I head that Harrison (and Molly…) thoroughly enjoyed the lasagna!
