Race for the Cure & Mom’s Birthday!

Hello! I hope you all had a great weekend and are rested and relaxed for the new week! Haha I am anything but! This weekend wore me out, I had my 15 mile run, I flew home to Kansas City, and then yesterday I ran the Susan G Komen 5K in Kansas City with my dad and Bailey and then celebrated my mom’s birthday! Whew! It was crazy and today I am just as busy, I hope I can sleep a bit during the drive out to Colorado tomorrow!

So let’s catch up a bit, starting with the 5K! Before the race I powered up with some Chobani! Haha stolen from my Dad’s stash and it even matched the pink theme!

I know I’d just run 15 miles the day before, so I tried to keep it slow for the race. I’d intended to walk if necessary, but I was surprised that I felt pretty good. Not tip top shape, but I was able to keep up with my dad and Bailey stayed with us, we crossed the finish line together!

When we got back, my dad made an omelet breakfast for the family. We all got to choose which toppings we wanted, and then he made them up for us! He wanted me to show you his secret technique (I like to call them omelet tacos…). He pours the egg mixture into a pan and then puts the top on. He says this keeps the steam in and makes the eggs fluffier.

Here’s mine: ham, mushrooms, spinach and a little cheddar cheese! Thanks dad!

After breakfast, my dad and I headed to Whole Foods to pick up some food for my mom’s dinner, a hiking store (Backwoods) to get me some boots for my hike on Thursday, and then Peachwave to get some frozen yogurt!

I did a little blog reading, rhythmic gymnastic and golf watching, and a few other errands in the afternoon. Then it was time for my mom’s birthday dinner! We’d invited over my grandparents, so there were 6 of us!

We had some hummus and artichoke dip with crackers, cucumber slices and carrots for appetizers, and then for dinner my dad grilled up some asparagus and pork chops and I made sweet potato fries and a fruit salad.

For the sweet potato fries, I just chopped them up into fry shapes, tossed them in olive oil and salt and then roasted them for an hour at 400 degrees. It may take less time if you make fewer, but mine were pretty packed onto the two trays so that’s why it took a whole hour.

We even bought some mini gluten free brownies for dessert, and decided not to tell anyone they were gluten free until after they’d tried them!
