Recently I’ve been wanting to get into juicing more, since I know it’s a great way to get nutrients but with less fiber. Now, I know not very many people have juicers and buying juice tends to be expensive, but I was lucky enough to get my cousin’s juicer when she moved so I’ve been trying to take advantage of it. Granted, yesterday was probably the 5th or 6th time I’d used it in 4 months… but I try.

Also, if you’re interested in buying juices, the best places I’ve found are either juice bars that make it fresh, or a few brands from Whole Foods. Here in Chicago I’ve gotten juice from Peeled and Loop Juice in the French Market, both of which I enjoyed.

As for buying from Whole Foods, my favorite (and the least expensive) has actually been the Whole Foods brand itself. I’m not sure if it’s sold everywhere, but they do have it at the North Ave location here in Chicago for any locals. Many Whole Foods locations actually have juice bars inside them, although I’ve never found one! Must be a California thing… I’ve also wanted to try their BluePrint juice, but that stuff costs some serious $$. Average is about $10 a juice! Good lord.

I digress. Yesterday I decided I wanted to make a big batch of green juice, so I headed to Trader Joes, bought some organic green veggies (and an apple) and headed home to make some juice!

Katie’s Green Juice (makes 2 servings)

Ingredients

4 thin slices of ginger

1 granny smith apple

1 lemon

3 cups kale

1 cup broccoli florets

1 head of celery

1 large cucumber

Directions

Slowly add to juicer and juice! Be sure to mix before consuming. If using a high powered blender (like a Vitamix or a Blendtec) be sure to remove any inconsumable parts (skin, rind, etc) as well as all skin and seeds if you’re trying to get rid of the fiber. Also – this recipe is about two servings of juice. You really should consume juice immediately, but I put the second half in a mason jar in the fridge to drink in the morning.

I was surprised that it tasted really good since I just made it up as I went! That’s one thing I love about juicing – it’s easy to use whatever you have on hand!

Mmmm frothy.
