WIAW–Italian Chicken Sausage Soup

Halfway through the week, woooohooo! And guess what?! I leave for CHARLESTON tomorrow!!! So excited to head back to SC, have a great time running the Palmetto 200, and hopefully get a couple hours of sleep..?

Anyhoo, for this week’s WIAW I have another new recipe for you! IF you’re new to What I Ate Wednesday, head on over to Peas and Crayons to see what it’s all about and check out the other participating bloggers.

I’ve been having a fun time just throwing together things in the crock pot that I think would make a good soup. It’s pretty simple: choose a protein, choose some veggies, have a base and try to throw in some carbs as well, or serve it with crackers or fruit on the side. As long as you keep things in one style of food (Italian, Asian, Mexican, etc.), it usually turns out pretty well, like this week!

Today’s recipe is Italian Chicken Sausage soup. I has easy, and quick to throw together ingredients as well as looks, tastes and smells delicious!

Italian Chicken Sausage Soup (serves 4)

Ingredients:

4 cups chicken Broth

3/4 cup dried white or brown rice

1/2 cup dried navy beans

6 chopped carrots

6 chopped stalks of celery

1 can diced tomatoes with Italian Seasoning

1 packet of Trader Joe’s chicken sausages, chopped (or sausage of choice)

Directions:

Combine all ingredients in your crock-pot and cook on low for 8 hours. You can cook on high for 4-5 hours, however the beans will not cook as well at a shorter length. Easy to re-heat or store in freezer.
