For today’s WIAW I’m going to show you the pieces I’m using to make several of my meals for this week. If you’re new to What I Ate Wednesday, head on over to Peas and Crayons to see what it’s all about!

One of the biggest issues I have when it comes to eating well-rounded meals, or basically not snacking all through a meal, is that sometimes I’m just not in the mood to cook. Or, I’m hungry right then and don’t want to take the time to make something.

I was inspired this week by Lindsay’s Sunday Meal Prep post and decided to go ahead and try it for myself!

Here’s a step by step of what I put together:

1. Veggies: I cut up a bunch of zucchini and summer squash and sauteed them in olive oil. I also grabbed a bag of broccoli and went ahead and steamed it to add as an easy side to meals.

2. Cauliflower Mash: I’ve been wanting to try making “mashed potatoes” out of cauliflower for a while. I cut up a head of cauliflower, steamed it, and then blended it in the Vitamix with some salt, pepper and a little garlic powder. It’s not bad, but makes me want to add a bit of butter to the dish!

3. Sweet Potatoes: I always microwave my sweet potatoes which 1) doesn’t taste as good and 2) is unhealthy since I wrap them in plastic wrap to do so… Guessing that’s not great toxin-wise. Anyway, I threw 4 sweet potatoes in the oven at 400 degrees for about 45 minutes. Voila!

4. Vegetable Shrimp Curry Crock Pot Meal: Saw this recipe on Treble In The Kitchen and it was really easy to make: just threw all the ingredients in the crock pot and then added the shrimp an hour before it was done.

5. Quinoa: quinoa is super easy to make ahead of time and store. I just threw 3/4 cup quinoa dry into a pot with 2 cups of water and boiled until the water was about gone.

6. Baked Chicken: (not pictured) I baked two large chicken breasts and broke them up into pieces and stored in baggies. Not gonna lie, I hate cooking chicken, something about it freaks me out! Anyone else?

 

And there you have it! Now my fridge is stocked with some great grab and go meal ideas. All I have to do is combine a few together! Hopefully this is a habit I can keep up and slowly get better with.
