Okay, okay, so they’re not actually scary, they’re just green. But some people might find that a little scary, right? I think so… humor me.
Before we get to the recipe though, I wanted to share a few fun things! Kelsey does this every Friday, but I don’t get as many awesome search terms as she does, so I have to wait to accumulate some good ones (e.g. the last time I did this was in the Spring…).

And now, on to my pancake recipe!
Ingredients
9 T egg whites
1/4 tsp vanilla
1 cup spinach
3 T flour (I used Bob’s Red Mill Garbanzo Bean flour)
2 packets Stevia*
Directions
Blend together egg whites, vanilla and spinach until spinach is blended. Then add in flour and stevia and pulse a few times to mix. Spray pan with non-stick spray and pour 1/4 batter onto pan. Wait until bubbles form and flip. Makes approximately 4 pancakes.
*you can add more stevia for a sweeter pancake, or add cinnamon or other spices
And can I please note the steam coming off these babies?
They were so good! I ate mine with some PB2 mixed with Protein powder as a sauce/syrup on top.
