Good morning all! I’m about to head out on my last long run before my 10 mile race next weekend: another 9 miler! Currently fueling up with plenty of water and some banana and PB!

Before I head out though, I’ve decided it’s been much too long since I shared some stories from the Huffington Post with all of you!

Is Gluten Free a Good Weight Loss Tool?

I was looking over the food page and saw an article titled Running Saved my Life. Obviously, I was intrigued. Normally I just skim over long articles, but this one really interested me and I actually read through it again the next day!

The article was by Richard Blais, winner of Top Chef All Stars and he uses the article to chronicle how he went from being an overweight chef whose first restaurant just closed, to a marathoner and Top Chef winner.

His inspiration? His then girlfriend, now wife. She was a big fitness enthusiast and to show her that he was worth it, he decided to go on a a run with her one afternoon. Although it didn’t sound like he did to well, he continued to run and actually proposed to his wife at the end of a 10K race!

Why does he say running changed his life? Not only did it give him something in common with his wife, but it gave him a new sense of self and better yet, he believes his physical fitness helped him considerably in winning the show.

He also describes how he was overweight as a child, eating plenty of soda and unhealthy foods. Because of this, and of course his love for food and running, he paired up with Alliance for a Healthier Generation to fundraise $50,000 during the New York Marathon. The organization is working to eliminate childhood obesity through teaching kids to live a healthier lifestyle.

I’ve heard of this organization once before, but it definitely sounds like something I would find worth supporting! Childhood obesity is definitely something that is on my mind more often than you’d think. Being in a big city I often see families with bags from unhealthy fast food restaurants and usually the entire family is overweight. Personally, I think it’s one thing if you want to eat unhealthy foods, but children follow in their parents’ footsteps and if they aren’t taught better, then they won’t know better and the cycle will just continue!

I definitely recommend reading the article, it was pretty interesting!

Speaking of healthy… I have an unhealthy obsession: hummus and nutritional yeast combo strikes again!

Yesterday it hit my lunch, in the form of leftovers! I threw together 1/2 cup of chickpeas, the rest of my brussel sprouts and butternut squash and heated that all up. Then I added 1 T Nutritional Yeast and 1 T hummus, mixed like crazy, and put it back in the microwave for 45 seconds. Quick and delicious!

I also think I’m getting a better handle on the Trader Joe’s GF Oats I bought. It seems to help to let them soak in the water and milk for about 10 minutes before heating up the stove.

Above was my breakfast yesterday: Pumpkin oats and homemade fruit on the bottom yogurt! I forgot how much I like making my own fruit on the bottom yogurt! This is what happens when pumpkin season hits – I can’t focus on anything else!

Well, time for my run and a little inspiration:
